I married my husband when I was 24 years old and we moved from Knoxville, TN to Miami, Fl. When we first arrived, I didn’t have a job so while I looked for a job, I attempted to grow my very lacking culinary skills. I ventured out of my comfort zone and decided I would make manicotti. Besides the manicotti splitting open every time I tried to stuff it (no surprise, I had overcooked them), I had another problem which I didn’t realize it was a problem until after we started eating. I didn’t know that the bulb of garlic is not the same thing as a clove of garlic! The recipe called for 1 clove of garlic which for me meant the whole bulb! It wasn’t until my husband was basically breathing fire from all the garlic and after an emergency run for Zantac that I realized my mistake. My poor hubby became my testing grounds for many culinary misfortunes. On Worst Cooks in America, Rachel Ray was encouraging one of the cooks saying, “It’s just food, food can smell fear”. The positive about cooking is it can be a major disaster with your husband breathing fire and eating a sandwich for dinner but you get a fresh start the next time and gradually grow in your skills. Roll up your sleeves, sharpen the knives, get cooking and use 1 clove of garlic!
